Early Spring Colors

I took the kids to the Texas Discovery Gardens this week. There was an early abundance of colors. I love to take pictures of plants.
Above is a plant called lamb's ear. The leaves are literally as soft as lambs ears.



I loved this big bush of silvery leaves.

Chard and Broccolini



I have no clue what kind of shrub this is, but it made me think of a burst of flames.


I love hyacinths, they smell lovely.






The shape of this fruit or seed, or whatever it might be is intriguing. It reminds me a little bit of an octopus.

Minnie

The Minnie pant from jcrew is one of my favorite. It looks great, feels great and is made to be worn all day long. I own it in 4 different colors. The red is absolutely fabulous!
I used to get them dry cleaned, but I just realized that they wash awesome on cold. Line dry and you safe a lot of money.

A Little Bit of Jam

I made some blueberry preserves today:



Just mixed the blueberries, sugar and lemon juice, bringing it to a boil.


It's boiling.

Weil es so schoen war...because it was so fabulous

Saturday we ventured back to the DMA to the "From the Sidewalk to the Catwalk" one last time. This time, we brought my friend Kara and Katharine's friend Charlotte along.
Above is a picture of my legs. I loved how the color of my JBrand jeans and my anthropology knit sweater worked with the colors of the cushion.

After waiting in line and slowly proceeding through the exhibit, we got to lounge on Gaultier sofa cushions and enjoy refreshments. It's nice to enjoy member perks.

I loved the cushions that were hung from the ceiling.

All-Day-Morning Muffins

I had given some of the muffins I made last week to my dear friend Meghan. She asked if I had written down the recipe. Needless to say I hadn't done that yet, so here goes:



All-Day-Morning Muffins
makes 24 muffins


Preheat oven to 350 degrees.

1 cup all purpose flour
1 cup spelt flour
3/4 cup organic, evaporated cane juice sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 tablespoons ground flaxseed

1 cup grated carrots
1 cup grated parsnips
juice from 1 fresh squeezed small orange
1/2 pint berries, or more if you have less of the above ingredients
1/2 cup dried chopped dates
1 Granny smith or other tart apple, peeled, cored, and chopped

2 large eggs
3/4 cup vegetable oil
1/4 cup unsweetened applesauce
2 teaspoons vanilla extract or
1 teaspoon orange extract


Soak the grated carrots and parsnip in the fresh squeezed orange juice, for at least one hour, longer if you want your muffins to be really, really moist.

In a large mixing bowl, mix the first 7 ingredients

Add carrots, parsnips, berries, dates and chopped apple to the dry ingredients.

In a separate bowl mix together the eggs, oil, apple sauce and vanilla or orange extract. Then add this to the mixture of dry ingredients and fruits. Mix well until everything is nice and moist. All you need is a wooden spoon.

Line muffin pans with liners or spray with baking spray. Spoon batter into muffin pans and sprinkle with cinnamon sugar.

Bake for 30 to 35 minutes on center rack. The muffins will be a lot darker when baked, almost a chocolate brown.

My kids LOVE these and they get extra fiber, veggies and fruits this way.

NOTE: This is a great recipe to experiment with. You can easily substitute any of the root vegetables, use one kind only, etc...In baking, my philosophy is that recipes are there to inspire your inner baker and to feed not just your body, but your soul, too.

Food, Food, Food

I recently bought a dehydrator to make dried fruits, vegetables, and fruit leather. With five kids I try to make as much as possible myself without having all the additives in the foods. The pears and apples came out great.

A few days ago I felt like making some morning muffins that were nutritious, too. I found a recipe in one of Emeril Lagasse's kids cookbooks. However, he used way too much white flour and white sugar, as well as lots of nuts which I knew the kids wouldn't eat, so I decided to put my own spin on it. The result was awesome! Even my super picky nine year old LOVED the morning muffins with parsnip, carrots and dates in them!
It's time to make another batch.

These orange cranberry scones were yummy, too.

Running in Toms and Leather Pants

This is not my everyday kind of outfit, but being in the kitchen baking and preparing lots of stuff today required comfy yet sparkly shoes. These leather pants are made to be lived in.
